Peanut Butter Chocolate Christmas Holiday Truffle Bites

Step 1
Add peanut butter, coconut oil, maple syrup, coconut flour, and salt to a big speed blender. Puree until all ingredients are combined into a thick “dough”. Roll the dough into 1” balls and place on a parchment lined baking sheet. Freeze until solid (about 30-45 minutes)
Step 2
While balls are freezing, melted dark chocolate using a double boiler or in the microwave. Just watch it closely to make sure it doesn’t burn! Once the balls are frozen, coat each ball in melted chocolate, then place back on the parchment lined baking sheet. Cover with festive colored sprinkles! Freeze for another 10-15 minutes, or until chocolate has hardened. Eat immediately or keep cold until serving time!

***Note: These can be simply made into “Buckeyes” instead of Holiday Truffles. To do this, only dip the balls halfway into the melted chocolate to give them the signature Buckeye look.
