Instructions
- In a bowl, mix cookie crumbs and melted oil or butter until evenly combined. Press 1–2 tablespoons into the bottom of each jar to form the crust layer.
- In a mixing bowl, blend together the peanut butter, Greek yogurt, cream cheese, maple syrup, vanilla, and salt until smooth and fluffy. If using protein powder, mix it in here. Taste and adjust sweetness as needed.
- Spoon or pipe the filling on top of the crust. Leave room at the top for the chocolate layer. Smooth the tops with the back of a spoon.
- Melt chocolate chips and coconut oil in a microwave-safe bowl (30-second increments, stirring in between) until smooth. Spoon a thin layer on top of each cheesecake jar.
- Refrigerate long enough for the chocolate to set. Garnish with optional toppings before serving.
- Tie a ribbon around each jar and add a “Happy Father’s Day” tag for a gift-worthy dessert that also packs a protein punch.
