Preheat oven to 350F. prepare baking sheets with parchment paper
Gochujang mixture

Mix butter, brown sugar, and gochujang to form a paste

Use a small silicone spatula to effectively stir the ingredients together. Set mix aside.

Use an electric mixer cream together butter and brown sugar. Mix until light and fluffy.

Beat in egg yolks. add in vanilla extract and mix again. add the peanut butter and beat until smooth.

Add in flour, baking soda, baking powder, and salt. Mix until combined.

Dot half of the gochujang mixture onto the surface of the dough. Roughly fold into the dough ( Do not over mix ). Repeat process with remaining gochujang mixture. This will allow you to see ribbons of the gochujang mixture through the dough.

Scoop the dough into 24 balls. Arrange them well-spaced on the prepared baking sheets. Top dough balls with a few of the chopped peanuts.

Bake for 10 minutes. Remove from oven and rap the bottom of the baking sheet on a work surface to flatten the cookies.

Let cool for 5 minutes on the pan or until they are firm enough to move without falling apart. transfer to a cooling rack to continue cooling.

Store in an airtight container.
