Instructions

  1. Make the crust

    In a bowl, mix cookie crumbs and melted oil or butter until evenly combined.

    Press 1–2 tablespoons into the bottom of each jar to form the crust layer.

  1. Make the filling

    In a mixing bowl, blend together the peanut butter, Greek yogurt, cream cheese, maple syrup, vanilla, and salt until smooth and fluffy. If using protein powder, mix it in here.

    Taste and adjust sweetness as needed.

  1. Assemble the jars

    Spoon or pipe the filling on top of the crust.

    Leave room at the top for the chocolate layer.

    Smooth the tops with the back of a spoon.

  1. Add the chocolate topping:

    Melt chocolate chips and coconut oil in a microwave-safe bowl (30-second increments, stirring in between) until smooth.

    Spoon a thin layer on top of each cheesecake jar.

  1. Chill and serve

    Refrigerate for at least 2 hours (or overnight) to let them set.

    Garnish with optional toppings before serving.
