No-Bake Peanut Butter Truffles

Ingredients

  1. Step 1: make dough

    Pulse peanut butter, coconut flour, maple sugar, coconut oil, and salt in food processor until all ingredients are combined into a thick “dough”.
  2. Step 2: roll into balls

    Roll the dough into 1” truffle balls and place on a parchment lined baking sheet. Freeze until solid about 30-45 minutes. (Alternatively, can mix by hand).
  3. Step 3: Prepare chocolate coating

    While truffles are freezing, melt dark chocolate using a double boiler or in the microwave. Just watch it closely to make sure it doesn’t burn!
  4. Step 4: Dip balls into chocolate

    Once the truffles are frozen, coat each in melted chocolate, then place back on the parchment lined baking sheet. Optional: cover with festive colored sprinkles.
  5. Step 5: Freeze

    Freeze for another 10-15 minutes, or until chocolate has hardened.
  6. Serving suggestion

    Eat immediately or keep cold until serving time.
