
Classic Peanut Butter Cookies

1. Preheat oven to 350*F. Line a rimmed sheet pan with parchment paper.

2. In a medium bowl, cream together brown sugar and eggs until incorporated. Whisk in vanilla extract. Add the peanut butter and fold in with a spatula until completely smooth and evenly mixed. It's ready when it's got the consistency of Play-Doh.

3. Form the dough in to balls with a scoop or spoon (either 12 2--inch balls or 24 1-inch balls). Place on the prepared sheet pan. For best results, pop in the freezer for 15 minutes before baking.

4. Sprinkle lightly with salt.

5. Bake for 20-22 minutes, turning the pan 180* halfway through baking (for smaller cookies, bake for 16-18 minutes). The cookies will be lightly golden and cracked on top when they're ready. Let cool completely before serving.
Note
We used our Natural No-Stir for this recipe. Because it's thicker, the dough retains its shape better. But our 100% Peanuts Peanut Butter in Creamy or Crunchy would work well, too!
