Cinnamon Almond Butter No-Bake Cookies

Classic no-bake cookies made with peanut butter are a staple around here—but I think we might love this new version made with Crazy Richard’s Cinnamon Almond Butter even better!

Ingredients

  • 1/2  cup  butter
  • 1 1/2  cups  granulated sugar
  • 1/2  cup  milk
  • 3/4  cup  Crazy Richard’s Cinnamon Almond Butter
  • 1  teaspoon  vanilla extract
  • 3 1/2  cups  quick-cooking oats

Instructions

  • Gather all ingredients and measure them out. Line baking sheets with parchment paper.
  • Add butter, sugar and milk to a saucepan. Heat over medium heat. Stir often until butter is melted and everything is combined.
  • Bring mixture to a full rolling boil (everything should be bubbling, not just a few here and there along the edges). Boil in this manner for 1 minute without stirring.
  • Remove from heat. Stir in the Cinnamon Almond Butter and vanilla until fully combined.
  • Stir in the oats and mix until they are completely coated with the almond butter mixture.
  • Drop by spoonfuls onto the baking sheets and allow to cool for 45 minutes or so. The longer they cool, the more firm they will be.

Notes

Of course, you can always use peanut butter instead of Cinnamon Almond Butter!
