Makes 4–6 mini jars (depending on jar size)
Ingredients
Cheesecake Filling
- 1 cup Crazy Richard’s creamy peanut butter
- 1 cup plain Greek yogurt
- 4 ounces cream cheese (softened)
- 3-4 Tablespoons maple syrup or honey (adjust to taste)
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 scoop vanilla protein powder (optional–for an extra protein boost)
Crust Layer
- 3/4 cup chocolate graham cracker crumbs or crushed chocolate cookies
- 2 Tablespoons coconut oil or butter (melted)
Chocolate Topping
- 1/3 cup dark chocolate chips
- 1 teaspoon coconut oil
Optional Toppings
- Chopped peanuts
- Mini chocolate chips
- Sea salt flakes
- Mini peanut butter cups
Instructions
- Make the crust
In a bowl, mix cookie crumbs and melted oil or butter until evenly combined.
Press 1–2 tablespoons into the bottom of each jar to form the crust layer.
- Make the filling
In a mixing bowl, blend together the peanut butter, Greek yogurt, cream cheese, maple syrup, vanilla, and salt until smooth and fluffy. If using protein powder, mix it in here.
Taste and adjust sweetness as needed.
- Assemble the jars
Spoon or pipe the filling on top of the crust.
Leave room at the top for the chocolate layer.
Smooth the tops with the back of a spoon.
- Add the chocolate topping:
Melt chocolate chips and coconut oil in a microwave-safe bowl (30-second increments, stirring in between) until smooth.
Spoon a thin layer on top of each cheesecake jar.
- Chill and serve
Refrigerate for at least 2 hours (or overnight) to let them set.
Garnish with optional toppings before serving.
